Banana & Blueberries Muffins


- 2 ripe bananas mashed
- 12 egg whites 
- 1/2  cup almond flour

- 1/2 cup flax seed flour 

- 1/4 cup dried blueberries or cranberries

- 1/4 cup sliced almonds

- 4 scoops vanilla whey protein
- ¼ cup Stevia 
- ½ tsp baking powder
- ½ tsp baking soda

- 1.5 tsp cinnamon

- 1 Tbs flax oil

-  2 Tbs Vanilla

- 2 Tbs Chia seeds






1. Preheat oven to 325 F and prepare a muffin pan by lining and spraying 12 paper liners.
2. In a bowl mix all ingredients starting with the eggs, mashed bananas, almond and flax flours, whey protein, Stevia, baking powder, baking soda,  cinnamon, vanilla, flax oil and chia seeds, mix with mixer in medium speed until batter is smooth.
3. Pour batter into prepared muffin cups, filling each cup until it is about ¾ full and add by hand the blueberries and almonds. 
4. Bake for 20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.
